I used to love baking, but now I prefer cooking; however, my husband is a cookie monster so I am trying to make “healthy” cookies more often to satisfy his sweet tooth. Hubs is not always a fan of the gluten-free baked goods, but this one was a hit! It was even toddler approved! The recipe only contains six ingredients, which makes it mommy approved! So, it was a win-win-win for this household! I like to keep things simple around here. If you are feeling a little crazy, you could add chocolate chips and/or nuts. This recipe is gluten-free, dairy-free, and contains no refined sugar
Gluten Free Peanut Butter Cookies
Ingredients
- 1 cup natural peanut butter
- ¾ cup sucanat
- 2 T 100% maple syrup Grade B
- 1 pastured egg beaten
- 1 tsp vanilla extract
- ½ tsp baking powder

Instructions
- Blend sucanat in blender or food processor until the texture of sugar.
- Mix all ingredients together in a mixing bowl.
- Use a melon baller scoop to scoop dough onto parchment paper lined baking sheet.
- Bake at 350 degrees for 10 minutes.
