When my husband and I bought our first Costco membership, we went a little crazy. We happily piled enough gigantic jars of spices, condiments, and flour into our cart to last until the end of time. Once we came down from the wholesale high, we started buying things in a more sane manner. With five people and one bathroom, a multi-pack of sanitizing wipes just makes sense, and I certainly don’t miss shopping for toilet paper every other week.
Still, every one in awhile I find myself spotting something new and convincing myself that if this product is good, then a 10 pound bag of it must be better. I recently experienced this when I spotted a giant bag of Bob’s Red Mill Old County Style Muesli. I convinced myself that this would become the star breakfast at our table. Surely nobody could complain about a warm, delicious, nutritious bowl on these snowy mornings. That’s just the kind of crazy thinking that had me making room in my kitchen for a 4-pound bag of the stuff.
If you have never had muesli, it is a granola-like breakfast cereal that can be eaten cold or hot. Bob’s Red Mill Muesli is made with a lot of nutritious whole grains, oats, sunflower seeds, nuts and raisins. Is it delicious? Yes. Are my dreams of my kids eating it daily coming true? No
I think the smart people at Bob’s Red Meal knew what they were doing when they put a recipe for “Bob’s Delicious Chocolate Chip Muesli Cookies” on the back of the bag. I mean, come on, isn’t every health food better with a little chocolate?
Chocolate Chip Muesli Cookies
Ingredients
- 3/4 cup unbleached white flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter softened
- 3/4 cup brown sugar
- 1/2 teaspoon vanilla
- 1 egg
- 1 cup muesli
- 1 – 6oz package chocolate chips
Instructions
- Preheat oven to 350.
- Mix flour, baking soda and salt together in a small bowl.
- In a large bowl, blend butter, sugar and vanilla. Beat in egg.
- Add flour mixture to butter/sugar mixture, mix.
- Stir in muesli and chocolate chips.
- Lightly grease cookie sheet. Drop dough by teaspoonfuls onto cookie sheet. Bake for 8-10 minutes.
