Blueberry Banana Bread is such a good, wholesome snack to fall back on, and with such honest ingredients it’s so nutritious, it’s almost a staple. Everyone finds that the last two bananas of the bunch tend to get left behind, and as each day passes they look less appealing, well this is the way to use them up and really make the most of their soft sweetness. The blueberries add a fresh juiciness to this combination, but the beauty of banana bread is that you can mix and match with all sorts of additions such as dates, walnuts or raisins. The basic ingredients remain the same while you can experiment with the fruity extras to make a nice change.
Blueberry Banana Bread
Ingredients
- 2 cups of spelt flour
- 2 tsp baking powder
- ½ tsp salt
- 1 tsp of cinnamon or mixed spice
- ½ cup of desiccated coconut
- 1½ cups of blueberries fresh or frozen
- 2 mashed ripe bananas
- 2 eggs
- ½ cup of honey
- ½ cup of yoghurt
- ½ cup of light olive oil

Instructions
- Gather and measure the dry ingredients into a large bowl.
- Mash the bananas and whisk in all the wet ingredients in another bowl.
- Mix the wet and dry ingredients together, which will combine into a sloppy batter, and stir in the blueberries.
- Pour the mixture into a prepared tin, and scatter the top with dried coconut flakes.
- Bake at gas mark 5 for 45 mins, or until a skewer comes out clean when tested.
