In a small bowl, combine yeast, warm water, and 1 teaspoon of sugar. Stir and set aside until frothy.
Heat the milk in the microwave for 45 seconds. Stir in melted butter until dissolved. Let cool until just warm.
Once the yeast has risen, mix it with the milk in a stand mixer. Gradually add sugar and half of the flour, mixing until a batter-like consistency forms. Let rest for 10 minutes.
Add the egg and salt to the mixture, beating well. Slowly incorporate the remaining flour to form a soft dough. Knead until smooth and elastic.
Cover the dough and let rise in a warm spot until doubled in size.
Punch down the dough and let rest for 10 minutes. Roll out into a rectangle, slice into sections, and cut each into equal pieces.
Place pieces on greased baking sheets, cover, and allow to rise until doubled.
Preheat the oven to 350°F. Bake for 10-15 minutes, or until golden brown.
To make the cinnamon honey butter, beat softened butter until fluffy. Add honey, powdered sugar, and cinnamon, mixing until well combined. Spread over warm rolls.
