1/4cupmilk of your choice(or unsweetened coconut milk)
2tablespoonsfresh parsleychopped
3/4cupketo-friendly bread crumbs
1teaspoonsalt
1/2teaspoonblack pepper
Glaze Ingredients:
3/4cupsugar-free ketchupfor glaze
1 1/2teaspoonswhite vinegar
2 1/2tablespoonsbrown sugar substitute
Instructions
Begin by preheating the oven to 375°F. Prepare a 9 x 5-inch loaf pan with parchment paper and apply a light coating of oil.
For Meatloaf:
In a large mixing bowl, combine the ground beef, onion, garlic, eggs, initial portion of ketchup, milk, parsley, bread crumbs, salt, and pepper. Blend all the elements thoroughly.
Form the mixture into a loaf shape and place it in the prepared loaf pan.
Cook the meatloaf in the oven for 40 minutes. Meanwhile, prepare the glaze. In a small bowl, whisk together the ketchup, vinegar, and brown sugar substitute until smooth.
After 40 minutes, remove the meatloaf and evenly spread the glaze over the top. Return it to the oven for an additional 15 to 20 minutes.
To Finish:
Once baking is complete, let the meatloaf rest for about 10 minutes before slicing. Drizzle some of the juices from the pan over the top and garnish with extra parsley.
