In a large saucepan, combine the chopped plums, sugar, water, and lemon juice. Stir the mixture continuously as you bring it to a boil, ensuring the sugar fully dissolves.
Keep stirring the mixture as it simmers for 15-20 minutes until it begins to thicken and reaches the gelling point.
Once ready, remove the saucepan from heat and carefully ladle the jam into clean mason jars.
If you'd like to store the jam for a longer period, you can proceed with the boiling water canning method. Otherwise, simply refrigerate the plum jam and enjoy it fresh.
