These decadent caramel apple cheesecake bars are a perfect fall treat, blending rich cream cheese with tart Granny Smith apples and topped with a crunchy streusel. They're easy to make and sure to impress your family!
3unitslarge Granny Smith applespeeled, cored, and finely chopped
1teaspoonlemon juice
2tablespoonsbrown sugar
1/2teaspooncinnamon

Streusel Topping:
1cupflour
1/2cupquick oats
1/4cuppecansfinely chopped
8tablespoonsunsalted buttercubed, room temperature

Instructions
Preheat your oven to 350℉ and line a 9 x 13-inch baking pan with parchment paper.
For Crust:
Crush the graham crackers in a blender until fine crumbs. Mix in the melted butter and sugar until fully combined. Press this mixture into the bottom of the pan evenly. Bake for about 8 minutes.
For Cheesecake Filling:
Beat together the softened cream cheese and granulated sugar on low speed until smooth. Carefully mix in the eggs, vanilla, and salt until just combined.
Once the crust has cooled slightly but is still warm, pour the cheesecake mixture over it evenly.
For Apple Filling:
Toss the finely chopped apples with lemon juice, brown sugar, cinnamon, and nutmeg until coated.
For Streusel Topping:
Combine brown sugar, flour, quick oats, and pecans in a bowl. Add the cubed butter and mix with your hands until crumbly and cohesive.
Layer the apple mixture over the cheesecake layer and sprinkle the streusel evenly on top.
Bake in the oven at 350℉ for about 30 minutes, or until the filling is set.
Once done, allow it to cool at room temperature for 1 hour and then refrigerate for at least 2 hours.
