This Cajun Shrimp and Rice Skillet is a delightful one-pot dish packed with vibrant flavors of shrimp and rice, seasoned with a homemade Cajun blend. Perfect for a quick family meal!
½teaspoondried oregano(or Italian herb blend or Herbs de Provence)
½teaspooncayenne pepper
¼teaspooncrushed red pepper flakes
For the Skillet:
1 ⅓cupsuncooked long grain white rice
2 ⅔cupschicken broth
1poundlarge or jumbo shrimp(peeled and de-veined)
4tablespoonsbutter(melted, divided)
1teaspoonminced garlic
Instructions
Cooking Rice:
In a large skillet, melt 2 tablespoons of butter over medium heat. Add in the garlic and half of the Cajun seasoning, then incorporate the rice.
Pour the chicken broth into the skillet, bring it to a boil, then reduce to a simmer and cover. Let it cook for 15 minutes, stirring once or twice during this time.
Preparing Shrimp:
While the rice cooks, combine the remaining melted butter with the remaining Cajun seasoning, and then pour this mix over the shrimp, tossing them to evenly coat.
Finishing the Dish:
Add the shrimp into the rice mixture, cover, and let cook for an additional 3-5 minutes or until the shrimp are pink and perfectly opaque.
If you desire, garnish with chopped parsley before serving.
