1 1/2poundsbaby red potatoescleaned and cut in half
2tablespoonsmelted unsalted butter
1/2teaspoondried oregano
1/2teaspoongarlic powder
1/2teaspoonfine sea salt
1/4teaspoonblack pepper
1/2cupfreshly grated Parmesan cheesedivided
Instructions
Place the halved potatoes into a large bowl and coat them with the melted butter. Stir in the oregano, garlic powder, salt, pepper, and 1/4 cup of the Parmesan cheese. Mix thoroughly until all the potatoes are evenly covered.
Lightly coat the air fryer basket with cooking spray and arrange the potatoes cut side down in a single layer.
Set the air fryer to 380°F and cook for 15 minutes. After 15 minutes, carefully turn the potatoes over, sprinkle the remaining 1/4 cup of Parmesan cheese on top, and continue cooking for an additional 5-7 minutes, or until the potatoes are crispy and tender when pierced with a fork.
