  • 1 tablespoon of vegetable oil
  • 1 medium-sized onion, finely chopped
  • 1 package (10 ounces) of frozen chopped spinach – thawed, drained, and excess water squeezed out
  • 5 large eggs, whisked
  • 1/4 teaspoon of salt
  • 1/8 teaspoon of ground black pepper
  • 3 cups of shredded Muenster cheese

  1. Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 9-inch pie pan.
  2. In a large skillet, heat the vegetable oil over medium-high heat. Add the chopped onions and cook, stirring occasionally until they are soft, about 3 minutes. Add the spinach and continue cooking until the excess moisture has evaporated.

  4. Pour the mixture into the prepared pie pan.
