Ingredients:

  • 1 cup whole wheat flour
  • 1 1/2 cups all-purpose flour
  • 1/3 cup unsweetened coconut
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 cup freshly squeezed orange juice
  • 1 cup non-fat plain Greek yogurt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup applesauce
  • 1/4 cup vegetable oil
  • 1 tsp orange zest
  • 2 cups fresh rhubarb, chopped into 1/2 inch pieces
  • Grated orange zest for garnish
  • Additional coconut for garnish

Directions:

Preheat your oven to 375 degrees F. Lightly grease 2 loaf pans.

In a large bowl, mix together whole wheat flour, all-purpose flour, baking powder, baking soda, brown sugar, unsweetened coconut, and cinnamon.

In a separate bowl, whisk vegetable oil, Greek yogurt, orange juice, orange zest, applesauce, eggs, and vanilla extract.

Gradually combine the dry ingredients with the wet ingredients until just mixed. Gently fold in the chopped rhubarb.

Pour the batter evenly into the two prepared loaf pans. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.

Check at around 30-35 minutes; if the tops are browning too quickly, cover them loosely with aluminum foil and continue baking.

Let the loaves cool in the pans for 5 minutes, then transfer them to a cooling rack to cool completely before slicing.

Optionally, sprinkle grated orange zest and additional coconut over the cooled loaves for garnish.
