This fiber and nutrient-packed smoothie has become my favorite way to start the day. By using whole fruits and vegetables, you are getting all the benefits of these power foods.
Favorite Green Smoothie
Ingredients
- 1 apple cored and cut into chunks
- 1 pear cored and cut into chunks
- 1 peach cut into chunks (see tips)
- 4 ″ cucumber cut into chunks (about 1 cup)
- 1 ″ piece fresh ginger root peeled and sliced
- Juice of 1 large lemon
- 2 cups pure coconut water
- 1 cup cold water
- 3 large kale leaves torn into pieces
- 1 large handful fresh spinach leaves

Instructions
- Add the apple, pear, peach, cucumber, ginger, lemon juice, coconut water and water to the pitcher of a high-powered blender (see tips below for more on this topic). Blend on high until smooth. Reduce the speed to medium and add the kale and the spinach a little at a time. When all the greens have been added, replace the top and return to high speed for another 30 seconds or so. The mixture should be very smooth and bright green. Store any unused portion in a glass jar with a tight fitting lid for up to a day. The color will not be as vibrant after a few hours, but this doesn’t affect the taste at all.

Quick Tips
1. I’ve been using the last of the summer peaches in my smoothies lately, but once they’re gone I will revert to frozen. If using frozen, use about 1 cup of sliced peaches.
2. I am always a little heavy handed with the ginger. I love the gentle heat it adds. I have added as much as 2″ ginger root, but you should consider playing around with this a little. It’s more palatable to little ones with a smaller amount, of course.
3. I will admit I’ve not tried to make this in a “regular” blender. I use the Vitamix, which does a beautiful job making silky smooth purees from whole fruits and vegetables. My guess is that if you have a high-powered blender and cut the fruits and vegetables up pretty well, you’ll be just fine.
